The perfect balance of sweet and bitter. Featuring Saint Sithney Seville Gin as the star, the favourite Italian aperitif provides a perfect accompaniment to this zesty twist on a classic.

Method

  1. Put two large ice spheres in an oversized glass.
  2. Gently pour in the Saint Sithney Seville Gin and Aperol.
  3. Add the juniper berries.
  4. Using a paring knife, cut off a strip of orange zest over the glass. Rub the rim of the glass with the zest and put it into the glass.
  5. Slowly pour in the tonic water.
  6. Finish with a few drops of both orange and Angostura bitters.
  7. Garnish with a squeeze of lime and a sprig of rosemary.
