Method

  1. Use a muddle to gently squash the lime, mint leaves, gorse flowers (if using), and honey together in the bottom of the glass.
  2. Add lime wedges and sugar (or sugar syrup) to the glass and gently muddle.
  3. Add fresh mint leaves and lightly press to release the oils (do not over-muddle).
  4. Fill the glass with ice.
  5. Pour over the rum.
  6. Top with soda water and stir gently.
  7. Garnish with a mint sprig and lime wedge.
