Method
- Use a muddle to gently squash the lime, mint leaves, gorse flowers (if using), and honey together in the bottom of the glass.
- Add lime wedges and sugar (or sugar syrup) to the glass and gently muddle.
- Add fresh mint leaves and lightly press to release the oils (do not over-muddle).
- Fill the glass with ice.
- Pour over the rum.
- Top with soda water and stir gently.
- Garnish with a mint sprig and lime wedge.
