Born in Singapore in 1915, this concoction was originally a pink-gin based cocktail to allow ladies to disguise their consumption of alcohol by passing it off as punch, a more acceptable beverage for public ingestion.
Method
- Put the St Sithney Dry Gin, lemon juice, sugar syrup and bitters into a cocktail shaker and add a large handful of ice.
- Shake to combine and strain into a tall glass filled with more ice.
- Top up with equal parts tonic and soda water, or pine soda.
- Garnish with a rosemary sprig and lemon wedge.
