Born in Singapore in 1915, this concoction was originally a pink-gin based cocktail to allow ladies to disguise their consumption of alcohol by passing it off as punch, a more acceptable beverage for public ingestion.

INGREDIENTS

  • 50ml Saint Sithney Dry Gin
  • 20ml lemon juice
  • 15ml sugar syrup
  • 2 dashes of Angostura bitters
  • Crushed ice
  • tonic water and soda water, or pine soda, to taste
  • rosemary sprig and lemon wedge, to garnish

METHOD

  • 1.Put the St Sithney Dry Gin, lemon juice, sugar syrup and bitters into a cocktail shaker and add a large handful of ice.
  • 2.Shake to combine and strain into a tall glass filled with more ice.
  • 3.Top up with equal parts tonic and soda water, or pine soda.
  • 4.Garnish with a rosemary sprig and lemon wedge.
