INGREDIENTS

  • 2 large ice spheres
  • 2 ounces Saint Sithney Seville Gin
  • 1/2 ounce Aperol
  • 6 juniper berries
  • 1 3" strip orange zest
  • 6-8 ounces tonic water
  • Orange bitters to taste (about 6 drops)
  • Angostura bitters to taste (about 3 drops)
  • 1 squeeze lime
  • 1 sprig of fresh rosemary

METHOD

  • 1.Put two large ice spheres in an oversized glass.
  • 2.Gently pour in the Saint Sithney Seville Gin and Aperol.
  • 3.Add the juniper berries.
  • 4.Using a paring knife, cut off a strip of orange zest over the glass. Rub the rim of the glass with the zest and put it into the glass.
  • 5.Slowly pour in the tonic water.
  • 6.Finish with a few drops of both orange and Angostura bitters.
  • 7.Garnish with a squeeze of lime and a sprig of rosemary.
