Try this:
- 50ml White Rum
- 6–8 fresh raspberries
- 20ml lime juice
- 10ml sugar syrup
- Soda water
Muddle raspberries in a shaker. Add rum, lime juice, and sugar syrup. Shake with ice, strain into a glass over fresh ice, and top with soda.
3. Spiced Rum & Apple Highball
Fresh with a subtle warmth.
What you need:
- 50ml Spiced Rum
- 100ml cloudy apple juice
- Soda water
- Apple slice to garnish
Fill a highball glass with ice. Add rum and apple juice, then top with soda and stir gently.
4. Pineapple & Rum Cooler
Tropical, but not overpowering.
Recipe:
- 50ml White or Gold Rum
- 75ml fresh pineapple juice
- 15ml lime juice
- Soda water
- Mint (for garnish)
Build over ice in a tall glass. Add rum, juices, then top with soda and stir lightly.
5. Rum & Elderflower Collins

To do it:
- 50ml White or Gold Rum
- 20ml elderflower cordial
- 20ml lemon juice
- Soda water
- Garnish with lemon wheel & mint
