Saint Sithney Lemon Gin is everything I want in a citrus gin a vibrant, clean, and refreshing, but with enough depth to make every sip interesting. It’s my favourite for summer evenings with lots of ice, a sprig of mint, and a good tonic.

During distillation, different elements are separated based on their boiling points. Gluten, like other proteins, has a very high boiling point and does not vaporize during the process. This means it’s left behind, ensuring it does not pass through into the final spirit.
